You will need:
Maurimix Vanilla Muffin Mix 350g
Vegetable Oil 130ml
Eggs 3 Nos.
Water 100ml
Coffee Syrup 20ml
Chocolate pieces 35g
*For the Coffee Syrup add 1 teaspoon coffee to 80g sugar and 85ml water and stirr over medium heat till sugar is dissolved. Bring to a boil and remove from heat. Allow to cool down.
Here’s how to:
1. Prepare a cupcake tray with 16 cupcake liners.
2. Mix the Maurimix Vanilla Muffin Mix, vegetable oil, eggs and water at slow speed for 2 minutes.
3. Continue mixing for 6 minutes at medium speed.
4. Add instant coffee and mix manually till well combined.
5. Pour 50-60g of Cappuccino muffin batter per cup.
6. Sprinkle chocolate on top.
7. Bake at 185⁰C to 195⁰C for 18 – 20 minutes.
